Pasta with Claims (Italian recipe)👌



Here is a recipe for a classic pasta con le vongole (pasta with clams):

Ingredients:

1 pound spaghetti

2 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon red pepper flakes (optional)

2 pounds fresh clams, cleaned

1 cup white wine

1/2 cup reserved pasta water

1/4 cup parsley, chopped

Salt and pepper, to taste

Instructions:


Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions. Reserve 1/2 cup of the pasta water and drain the pasta.


In a large pan, heat the olive oil over medium heat. Add the garlic and red pepper flakes, if using, and cook until fragrant, about 1 minute.


Add the clams to the pan and pour in the white wine. Cover the pan and cook until the clams have opened, about 5-7 minutes.


Once the clams have opened, use a slotted spoon to transfer the clams to a plate. Discard any clams that have not opened.


Add the reserved pasta water and parsley to the pan and bring the mixture to a simmer. Season with salt and pepper to taste.


Add the cooked spaghetti to the pan and toss to coat the pasta in the sauce. Serve the pasta with the clams on top and garnish with additional parsley, if desired. Enjoy!
